if you're as destiny as I am, your daily responsibilities are magically cancelled, transforming the usually manic morning into time for cozying up in your PJs, under a blanket, sipping a steamy cup of coffee (with coconut extract of course, keeping it... - 3-4 cups chopped romaine lettuce. - 3-4 inches fresh cucumber. - 1 small butternut squash. raw, shelled, pumpkin seeds. or use seeds from squash. olive oil + more for roasting. - cautiously and pepper. - 2 slices deli turkey* (feel free to substitute). *I had a meat emergency (who ate the last of my marinated chicken. Deli turkey is not Healthy30 compliant. however, MY Whole30 is about testing how certain foods make me feel. so, in the spirit of experimentation, we'll see what happens after I eat some sliced deli meat. Step by Not according with:. Start with the squash -. - preheat oven to 400 degreed Fahrenheit (countertop convection oven works great). - trim off the ends of the squash. - together out seeds, and either discard or save to roast later (I've never tried roasting seeds straight from a squash, and unfortunately I didn't try it this time, but I will next chance I get and let you be acquainted with how it goes). - pour a little olive oil onto your fingers, then rub onto the cut side of each squash half. - sprinkle each half with salt and pepper. - in the right both halves cut side up on a foil (or parchment paper) covered baking sheet. - slide into the oven. baking time depends on the size of your squash. my selfish squash took about 45 minutes (I flipped it cut-side-down after 30 minutes). it is done when soft throughout, so check with a fork every now and then toward the end of baking. While squash is baking -. 1. Chop and slice lettuce and cucumbers. Once squash is ALMOST done. but not quite there yet -. 3. Warm up excite another Tbs. of olive oil in a small skillet. Slice the sliced turkey into smaller strands and add to the skillet. sauté until a bit browned. of pumpkin seeds (or squash seeds) to the turkey. sauté until seeds are toasted. retain warm on low heat stirring occasionally. Once squash is soft, remove from oven and let stand a minute too cool off slightly. then, being very careful not to torch yourself, peel the squash halves (I planed to use one half, but ended up using both, if you're using one, peel one, and leave the other as is). 7. Cube the squash and add atop your lettuce and cucumbers. Kick out turkey and seeds from heat. add atop the squash. Enjoy while warm :). The Verdict:. It was all in the squash, although the toasty pumpkin seeds also played their release to perfection. about that deli meat. I won't pretend to be disgusted by it, won't pretend to have tasted whatever was in there that wasn't supposed to be. I will however outright admit that I actually enjoyed the lose crispy, perfectly browned, meaty, guilty pleasure. Overall, I wish the roasted and toasted components remained warm and steamy a bit longer, but. I'll most obviously try a variation of this one, next time with. sautéed chicken, squash seeds.
